April 25- Paella Mixta: shrimp mussels, chicken and cantimpalitos; oil cured roasted yellow and red tomatoes, red pepper strips, mushrooms and green onions; over paella rice cooked in a rich saffron broth

May 23- Festividad del Dia de Canarias “Day of the Canary Islands” Paella negro. Seafood paella with prawns mussels clams squid and octopus with sofrito cooked in squid and octopus ink served with a colorful blend of roasted vegetables


June 27 – Valencia: traditional Valencian paella with rabbit and snails; snails on the side, rabbit, chorizo, chicken, roasted yellow tomatoes, padrones. Red pepper strips and mushrooms with paella rice cooked in traditional saffron broth


July 25th – Feast of Saint James the Apostle” Basque country: Basque style paella: scallops, mussels, clams, razor clams, and chorizo and diced serrano jamon ,Davina tomatoes, roasted peppadew, and padrones peppers with paella rice cooked in a smoked paprika and saffron broth

August 29th – La Tomatina” small town Bunol near Valencia holiday when people chuck tomatoes at each other
pork and beer tomato paella: dark or red beer deglazed with the onions, whole muscle roasted pork, guanciale, short rib lardon, tomatoes, sundried, fresh, and davina tomatoes, stoplight peppers, mushrooms, and cantimpalitos

September 26 – Paella Marinara: scallops, mussels, shrimp, clams and serrano jamon, roasted red and yellow tomatoes. padrones, leeks and tomato saffron soffrito
